Spiced Peach Chia Seed Pudding
Inspired by peach cobbler flavors, this chia seed pudding will have you so satisfied and perfect for the fall season.
Last week, I received a few questions on social media about where I source my iron on a plant-based diet.
There are plenty of great options for iron in a plant-based diet, but my favorite source is chia seeds.
I have to admit, I wasn't always a fan of chia seeds; I used to dislike their texture. However, with all the incredible health benefits they offer, I knew I had to find a way to enjoy them! 😂
To maximize iron absorption, it’s essential to pair iron-rich foods with those high in vitamin C. The vitamin C boosts your body’s ability to absorb the iron effectively.
This is exactly why I love pairing my chia seed pudding with fresh peaches from the farmer’s market. Peaches are rich in vitamin C, making them the ideal complement to this iron-packed breakfast!
This recipe is inspired by peach cobbler, featuring chia seeds infused with warm spices and a texture reminiscent of thick, creamy oatmeal. The thickness comes from adding ground flax seeds, almond butter, and coconut milk.
If you enjoy oatmeal for breakfast, consider swapping it out for this recipe! You might notice a difference in how your body feels—less bloating and inflammation compared to traditional oats.
I blended all the ingredients together before refrigerating them overnight for a smooth thick consistency.
For the topping, I used some very ripe peaches from the farmer’s market. I cooked them down a bit with a touch of agave nectar, cinnamon, and nutmeg to create that delicious peach cobbler filling vibe.
The recipe is pretty straight forward and I’m sure you have all the ingredients on hand. But I jump into the recipe, here is a quick video below on how to make it.
I will note that this recipe is for 1 serving, but feel free to double the recipe to meal prep breakfast for the next few days. The base of this chia seed pudding can be pared with any toppings and fruit you would like.

Spiced Peach Chia Seed Pudding Recipe
Ingredients:
1/4 cup coconut milk (or any dairy-free milk)
3 dates, pitted
2-3 tbsp agave nectar or pure maple syrup (if you desire it sweeter than just the dates)
1 tbsp almond butter or any nut butter of your choice
1 tbsp ground flax seeds
2 tbsp chia seeds
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp vanilla extract (optional)
Pinch of salt
Topping:
2 fresh or frozen peaches (about 1 cup)
3 tbsp pure maple syrup or agave nectar
1/4 cup water
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp vanilla extract (optional)
Instructions:
To a blender, combine all chia seed pudding ingredients.
Blend until smooth.
Pour mixture into an airtight container and refrigerate overnight.
Next day, heat peaches on the stove with water, maple syrup, cinnamon and nutmeg.
Warm peaches until tender and liquid evaporates a little. You can continue to cook until all the liquid evaporates or leave some of the liquid like I did.
Scoop out chia seed pudding into bowl, then top with warm spiced peaches.
