I received so many questions about the kale salad recipe I posted on Instagram this week, so I thought I'd share it here!
This salad was inspired by the beautiful selection of leafy greens I picked up at the farmer's market.
I wanted to make this salad even more nourishing, so I combined a mix of greens. I included dino kale, savory cabbage, and romaine lettuce, along with fresh herbs like green onions and cilantro.
For those who aren't fans of cilantro, I'll share a flavorful herb alternative that you can use to make a homemade salad dressing to complement this recipe.
Kale is a powerhouse of vitamins, including Vitamin K (important for bone health), Vitamin A (supports eye health), Vitamin C (boosts immune function), and several B vitamins.
It also contains minerals like calcium, iron, and magnesium, which contribute to healthy bones and muscles.
The high fiber content in kale, along with its potassium levels, can help reduce blood pressure and support cardiovascular health.
Like kale, cabbage is high in Vitamin C, which supports immune function and skin health. It also contains Vitamin K for blood clotting and bone health.
Cabbage contains a special type of fiber called prebiotics, which helps support the growth of beneficial gut bacteria. This can improve digestion and overall gut health.

Just look at this fresh lettuce!! I noticed the lettuce at farmer’s markets are usually double the size as getting them at the grocery store.
When you buy fresh lettuce and mixed greens at a local farmer’s market, the quality is superior, they’re fresher, and packed with more nutrients. I highly recommend making weekly trips to the farmer’s market for your grocery shopping.
What makes this salad so delicious is the variety of textures and flavors. Honestly, the salad dressing really takes it to the next level!

This salad has kale, cabbage, romaine lettuce, cucumbers, avocado, chickpeas, hemp seeds and more! This is definitely one of my favorite salads to make.
Mighty Green Kale Salad Recipe
Serving size: 1
1/2 cup dino kale, chopped
1/2 cup savory cabbage, chopped
1/2 cup romaine lettuce, chopped
1/2 cup cucumbers, diced
1/2 ripe avocado, diced
1/4 cup kalamata olives, chopped
1 cup cooked chickpeas
1/4 cup sunflower seeds
3 tbsp hemp seeds
Cilantro Avocado Hemp seed Dresing
1/2 ripe avocado
Handful of cilantro → replace with Thai basil if you don’t like cilantro
1/2 cup hemp seeds
1/2- 3/4 cup water (to desired consistency)
1-2 spring green onions
1 tbsp nutritional yeast (optional)
2 cloves garlic
1/2 tsp ground cumin
1 tsp onion powder
1 tsp garlic powder
2-3 limes -juice
salt to taste
Directions:
Roughly chop the spring onions.
In a high-speed blender, combine all the ingredients for the salad dressing. Start with 1/2 cup of water and add more if needed to reach your desired consistency.
Blend until smooth.
Taste and adjust the seasonings, if necessary.
Toss all the salad ingredients together in a bowl, then drizzle with the dressing. Mix thoroughly and enjoy!
Store any leftover dressing in an airtight jar in the refrigerator for up to 7 days.
